COCONUT-CRANBERRY-DATE-WALNUT LETTUCE WRAPS 8 oz. organically-sweetened raw cranberries 8 oz. pitted raw dates 12 oz. walnuts (halves & pieces are ok, since measuring by weight) 2 tablespoons shredded coconut allspice to taste cinnamon to taste Romaine lettuce Chop cranberries and dates in a food processor until pieces are about ¼" to ½" in size. Add walnuts and coconut. Sprinkle allspice and/or cinnamon over the top. Process just enough to mix all ingredients, being careful not to make mush of the walnuts. Serve on Romaine lettuce. Optionally serve with any compatible raw fruit sauce (plum, peach, cranberry).
